Treasure on Eggs

I don't know how to describe this dish, so I named it "Treasure on Eggs". Because the ingredients consist of varieties and it is placed on omelet. I have eaten this dish wrapped with the omelet, some sort like "Nasi Goreng Pattaya" But, they only wrapped the ingredients and served with a bowl of white rice. I tried to cook it with my own ingredients & style. But, I didn't wrap it with omelet but with salad instead. The combination is superb! It is not only healthy but also have the crunchy bite of the salad. You may also eat it with rice or noodles.
Ingredients:
Chicken breast meat - 200gm (cut into small pieces)
Celery - 1 stalk, chopped finely
Carrot - Half, small cubes
Baby corn - 2 stalks, small cubes
Parsley - chopped coarsely
Olive oil - 2 tbsp
Garlic - 1 clove, chopped finely
Onion - Half, chopped finely
2 Eggs
Salad - butterhead
Seasonings:
1 tbsp Oyster Sauce
1 tbsp Plum Sauce
1 tbsp Light Soya Sauce
1 tsp Sesame oil
4 tbsp water
A dash of pepper
Methods:
1. Combine seasonings and mix well. Set aside.
2. Heat up oil and make an omelet. Lay omelet on a plate and set aside.
3. Heat up olive oil, sautee garlic and onion till fragrant.
4. Add in vegetables, stir fry for 2 mins.
5. Add in chicken, stir fry till chicken is tender.
6. Pour in seasonings, stir fry for 3 mins.
7. Add in parsley, mix well. Dish up and put on the omelet.
8. Add some chopped parsley for garnishing.
9. Arrange salad at the side of the omelet. Serve.
