Beetroot soup

Beetroot is reddish purple in colour and has many benefits. I simply adore the reddish purple colour of this vegetable. Beetroot is high in B Vitamin folate, good for pregnancy. It can also reduce cholesterol levels. We used to make beetroot soup. You can also make beetroot salad, eaten raw with a squeeze of lemon juice. I find that it tasted like radish or (Sengkuang). Ingredients:
2 chicken thighs, removed skins
1 big beetroot
1 carrot, chunks
1 big onion, chunks
Salt to taste
2 liters water

Methods:

1. Wash and blanch chicken thighs.
2. Boil 2 liters of water, once boiled, add in chicken thighs.
3. Add in beetroot, carrot & onion. Bring to boil in low fire for 2 hours.
4. Add in salt to taste and serve.

Yes, beetroot is on sale here, and I know its also used for making sugar.

Haven't boiled beetroot soup for quite sometime. Need to scout for fresh beetroot first. ;)
