Pan Fried Salmon with Vegetables

I love brussel sprout to bits, previously I used to stir fried local brussel sprout with garlic. After tasting one of the restaurant way of stir frying local brussel sprout with butter. I fell in love with it. So, I have made some stir fried brussel sprout with garlic and butter as a side dish. It is so nice and yummy to eat with pan fried salmon and sauce. Heavenly and delicious!

Ingredients:
1 slice of Salmon fish, cut into 2
1 packet of Local Brussel Sprout (菜胆), washed & drained
2 cloves Garlic, chopped
2 shallots, chopped
Salt
Corn flour

Ingredients for sauce:
1 tbsp light soya sauce
1 tbsp Lee & Perrin sauce
1 tsp sugar
Ground black pepper, dash
1/2 tsp corn flour
50ml water

Methods:
1. Sautee garlic with 1 tsp oil and butter till fragrant, add in Brussel Sprout.
2. Stir fry till soft. Set aside.
3. Season salmon with some salt and corn flour.
4. Pan fried salmon till just cooked. Set aside.
5. Sautee shallots till fragrant, add in ingredients for sauce.
6. Simmer for 2 mins. Pour on fish. Dash some ground black pepper.
7. Add Brussel Sprout at the side. Serve.

Oh yeah! Brussel sprout is so delicious, especially those Australia's version, smaller, rounder and crunchier!

Hey Linda! It is not oily at all... yea, it is the sauce to make the fish more juicy. Give it a try!

Just wanna check with you on the Ingredient for sauce. Do I mix all the light sauce, Lee & Perrin sauce, corn flour and sugar into the 50ml water? Then the black pepper is only to dash on the fish once everything is done?

Help!!! When u mentioned - season salmon with salt and corn flour...do you u mean i add some salt and rub it agaisnt the salmon, then i rub some corn flour on the fish too? Then i fry immediately once I have added salt and corn flour?

Hi,
I've tried to cook. It taste really good even w/o the black pepper bcos I've forgotten to buy one. I also forget about the Brussel Sprout bcos I'm so so focus on doing the fish. Anyway, tks for the recipe:) Hv a good day.

Hi Linda, so sorry for the late reply because I wasn't online for the past 3 weeks. You did a great job! Ya, you just need to rub the salt and corn flour on the fish and season for 10 mins before pan fry. Keep up the good job!
