Stir Fried Eggs with Mushroom & Veggie

My son is a bit picky when it comes to vegetables. He only prefers certain type of vegetables and depending on how it is cooked too. He loves eggs & omelette, especially those fried rice with eggs... *slap forehead*. So, in order to coax him to eat more greens, I need to mix everything in and it has becomes like "Crouching Tiger, Hidden Dragon" haha... I bought some fresh white button mushroom, some left over "Huang Ti Miao" (stir fry "huang ti miao" recipe) & some tomatoes. Blanch everything before hand & stir fry with eggs. Isn't it easy? Thus, he managed to finish everything with rice & soup. *wink*

Ingredients:
2 eggs, beaten
2 fresh white button mushroom, blanched
1 tomato, blanched, removed skin & seed
Some chopped "Huang Ti Miao", blanched
Salt & pepper to taste

Methods:
1. Blanch huang ti miao & mushroom with some oil & salt in boiling water. Set aside.
2. Cut tomato into 2, remove seed, make a cross on top & blanch. Peel off the skin & chopped.
3. Chop huang ti miao & mushroom coarsely.
4. Heat up oil, sautee all the ingredients, add in eggs and sprinkle some salt & pepper to taste.
5. Gently stir fry it until it becomes scrambled eggs.
6. Dish up & serve.

OMG! I didn't know that the Chef here is a TIGER n DRAGON at home. :O

hahhahahha... it is not the Chef! it is the "dishes" that created by the Chef!
