Basil Potato Patties


Ingredients:
4 medium potatoes, peeled and quartered
Handful of fresh basil leaves, chopped (use the leaves only - about 10 stalks)
1/2 cup milk
1/4 cup butter
1 1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup self-rising flour
1/2 cup all-purpose flour
1/4 cup finely minced onion
Olive oil for frying
Methods:
1. Cook potatoes in boiling water covered for 15 minutes or until tender.
2. Drain & mash potatoes with a potato masher or fork.
3. Add remaining ingredients and mash well. Allow mashed potatoes to cool.
4. Stir in flour, onion and basil leaves. Mix well.
5. Heat up olive oil in a non-stick pan. Scoop 1 tbsp of batter, fry till golden brown.
6. Put on the kitchen towel to absorb extra oil. You may get approx. 12-15 patties.

I remember something when you mentioned about many kind of basil leaves in your previous post. Here in Indonesia, the basil leaves is called Daun Kemangi. Usually people will eat it as "lalapan", eat directly dip into chili sauce.
At home, my mom likes to cook the daun kemangi together with eggs and red chili as like scramble egg :)
