Pan Fried fish with herbs

I had a delicious and wonderful baked fish with herbs at one of the famous Western restaurant in town. It inspired me to do it myself at home for my family. I have googled some of the recipes online, but some seem too difficult and too much of ingredients which hard to find. In order to simplified the recipe, I added only some of the herbs of my selection. Went to the store, looking for fresh sweet basil but sold out, so just grabbed a packet of marjoram to test it out. Marjoram has strong taste and smell, some sort like fresh mint, so you just need to use minimum amount of it. Hope to get fresh sweet basil and rosemary the next round!

Instead of baked which needs a longer time, I pan fried the fish & saute the herbs. These make my preparation and cooking time shorter and simpler. Thus, I have a healthy and delicious pan fried fish fillet with herbs which became my son's favourite dish now. Hope you will like this simple modified recipe!


Ingredients:
500gm Dory fish fillet, cod fish or snapper
1 handful of Coriander leaves, chopped
1 handful of Spinach, chopped
1 tbsp of Marjoram, chopped
1/2 red onion, chopped
2 tbsp olive oil
50ml water
1 pc Cheddar cheese, break into pieces
1 tsp dried basil leaves
1/2 carrot, cut and blanched

Method:
1. Cut fish fillet into 3 portions (big pieces).
2. Pan fry in a non-stick pan till cooked. Set aside.
3. Sautee onion with olive oil till fragrant.
4. Add spinach, coriander & marjoram. Saute till fragrant.
5. Add in water & dried basil leaves. Simmer till ingredients are soft.
6. Transfer to blender, add extra olive oil & cheese. Blend till semi-paste.
7. Pour onto the fish. Garnish with sliced carrot. Serve with hot steamed rice.

My bits of tips:
• You may use sweet basil leaves, thyme, rosemary, dill or any fresh herbs you can find
• You may also Baked the fish with the herbs ingredients but don't have to saute in advance.

Is this like a marjoram and coriander pesto? Very interesting huh .. I am a huge fan of basil pesto, I think it's time to try it other way. Makes the life kinda interesting, don't you think?

Tks...Tks... infact, this fresh herbs can make into many different way and dishes... give it a try! I like basil pesto sauce too...

You can try to use Dill. This herb is usually used in fish dishes. Not necessarily fresh ones but the dry one sold in the bottle will do. :)
