Organic Fibre Morning Cereal

Have you ever running out of idea on what to eat for breakfast? I did at times.... when I'm rushing to work in the morning, I 'm always stuck with what to eat for breakfast or in fact a healthy breakfast. We normally can find plenty of stalls at the roadside along our way to work. Especially "nasi lemak" (Coconut milk rice with condiments) stalls fills with variety of "kuih" (Asian deserts / cakes), fried noodles, fried rice, curry puffs or "roti canai" (Indian cuisine). These is in fact unhealthy and heavy for breakfast. But, Asian or Malaysian in general loves it to bits... may be we have no choice but to consume high calories food for breakfast due to time consuming in the morning?

I went to an Organic shop some days ago. My intention was to grab a packet of Organic Baby Rolled Oats... but end up with Organic Soya Milk Powder, pumpkin mantau (pumpkin bun), a can of Fibre morning cereal... The pumpkin mantau is superb! So nice to chew with and full of natural flavour!

I love the Organic Baby Rolled Oats with any beverage...such as Milo, fresh milk, Holicks & so on... as it is indeed nice to bite on & filling. But, this Fibre morning cereal adds on a flavorful and savoury texture of the beverage. It consists of organic seedless raisin (a huge one), buckwheat flakes, konjac flakes, dried carrot, seaweed, lecithin granules, brewer yeast flakes, wheat germ, black & white sesame seeds. The raisin makes the while beverage more appealing and nice to chew with...

I wouldn't know there is so much of difference in Organic food, including fresh raw vegetables until I tested it myself a year ago. The organic baby spinach is just awesome compared to the non-organic ones! It is indeed fresher, sweeter & nicer to eat with. How I wish if the Organic foods can be cheaper in Malaysia, so that we can consume more of the healthier, fresher & delicious food daily... Do you go "Organic"?

Ham, Cheese Bread Rolls

My son and my hubby love bread to bits. They can finish 1/2 loaf of bread within a day. Besides, french toast, bun, tortilla, pizza or any source of bread is their favorite too. My son loves tuna spread on bread, my hubby loves peanut butter on bread and Mummy likes bread with ham & sausages! I got this superb recipe from Mitong's food blog. She has fantastic recipes from Western to Asian recipes in Mandarin. If you are Mandarin reader, do hop on her blog!

This simple and delicious ham, cheese bread roll became our favorite. A great snack recipe, suitable for picnic or party at home. Look at those cheese that oozing out from the bread roll... simply fantastic! It would be better to have fresh chopped parsley, but I am running out of those, so I replaced with some dried basil leaves! I believed the fresh parsley will definitely makes the bread roll more appealing and appetizing! Let's have tea...

Ingredient:
8 slices White / Whole meal bread
8 slices Chicken / Turkey / Pork ham
8 slices Cheddar Cheese
Flour solution (2 tbsp Plain flour + 1 tbsp water)
Parsley, chopped (I used Dried basil leaves)
3 eggs, beaten
Pinch of salt
Dash of pepper
Butter for frying

Methods:
1. Beat eggs with salt and pepper, stir in basil leaves. Set aside.
2. Combine flour solution. Set aside.
3. Cut away the crust of bread. Roll flat with a rolling pin.
4. Put a slice of ham on bread and a slice of cheese on the cheese.
5. Spread some flour solution on the end of bread.
6. Roll up and close tight.
7. Heat butter. Dip bread roll with egg mixture.
8. Pan fry till golden brown. Serve.

Stir Fried Prawns with Basil & Chilli

Didn't I tell you that I have fallen in love with sweet basil leaves? Check out my previous recipes! This time I managed to get hold a packet of it. Thus, I thought of stir fry it with some prawns! Added a little spiciness of red chilli to have a "kick" of this dish. Bouncy, sweet, fragrant and a little spicy... that is what I can describes. A quick and easy dish for those whom loves prawns! This is gone within minutes!

Ingredients:
500gm Big-sized Prawns, removed shell - retain tail
6 fresh sweet basil leaves, chopped
1 red chilli, half cut into strip, half minced
1 clove garlic, minced

Seasonings:
Dash of salt, sugar & pepper

Methods:
1. Washed prawns, removed shell & vein. Retain the tail. Pat dry.
2. Soak in ice cold water & ice cubes with some salt for 1 hour. Drained.
3. Marinate with seasonings, chopped basil, minced garlic & minced red chilli for 10 mins.
4. Heat 1 tbsp of olive oil. Stir fry prawns for 5 mins for till cooked.
5. Fold in chilli strips. Mix well.
6. Garnish with some fresh sweet basil leaves. Serve with rice or noodles.

My bits of tips:
Pat dry prawns, soak prawns with ice cold water, ice cubes & some sea salt to get the bouncy bite.
Don't over cook the prawns, instead stir fry until prawns are about to cooked. Off fire and leave for 1 min.

Tuna Sushi

Happy Valentine's Day! Tomorrow is the special day, which I believed many of you already have superb plan, either a candle night dinner, lovely present or a long walk at the beach will surely be delightful. How about a home made simple meal for the loved ones? My hubby loves tuna sushi to bits. The first sushi he will be choosing every time we went to Japanese restaurant will be tuna sushi. Be it hand roll or other various, he surely opted for tuna sushi.

So, I made tuna sushi the very first time after so long. It will be so satisfying to see your loved ones enjoying those sushi hand made by you, right? He finished all the tuna sushi and asking for second serving. It would be a great idea to make it again tomorrow for Valentine's Day, especially for you loved ones that enjoy every bits of it. You may want to check out my previous Spinach Rice Roll for some idea.

How do you celebrate Valentine's Day?
Whatever ways that you plan to have it tomorrow. I am here wishing all of you a "Blessed" & "Unforgettable" Valentine's Day!

Ingredients:
185g Tuna Flakes in Sunflower Oil, drained
3 tbsp Mayonnaise
1 cup Sushi rice (short grain rice)
Seaweed paper, you may get the pre-sized paper

Methods:
1. Combine tuna with mayo. Mix well & set aside.
2. Cook sushi rice according to the measurement. Mine is 1 cup of rice with 2 cups of water using rice cooker.
3. Take about one tablespoon of sushi rice. Form an oblong shape with your hand and fingers.
4. You may need to wet your hand a little before shaping the rice.
5. Cut seaweed paper into desire length and width. About 3 cm height.
6. Wrap the rice with seaweed, close the end with some water.
7. Top up with tuna mayo and it is done!

Fresh Fruit & Vegetables Juice

Occasionally we will make some homemade fruits or vegetables juices, just to cool our body or detoxifying the body once a while. The best is to drink it early in the morning and it needs to consume immediately after processing. My son loves it very much as well as my hubby, the best way to boost them with vitamins & also greens in these juices. If you need a refreshing drink including greens in it for those non greens lovers, try this out...

Ingredients:
2 Green apple, peeled - cut into chunks
1/2 Cucumber, peeled - cut into chunks
4 stalks Celery, cut into pieces
1 tbsp Organic Wildflower Honey or any Pure Honey

Methods:
1. Prepare all fruits & vegetables. Set aside.
2. Process in a blender. Sieved and drained.
3. Add honey and mix well.
4. Pour into 4 medium-sized cups. Serve with or without ice cubes.

Herbs Baked Potato

I wanted to prepare some side dishes for dinner besides the Seafood Baked Rice that I have made at my previous post. Baked potatoes seem a good idea to cherish. Since my hubby loves baked potato, so it is indeed a great way to serve with the main dish. Just grabbed some US large potatoes, cut into wedges, dash in some herbs, butter & garlic. Bake till golden brown, dish up and it is ready to be serve. What an easy peasy job! You may also combine other dried herbs & grated cheese. A great idea for party too. Isn't it simple and delicious?

Ingredients:
2 large U.S. Potatoes, cut into 8 wedges
1 tbsp butter
Dash of dried basil leaves
Dash of dried oregano leaves
1 clove garlic, minced or 1 tsp garlic powder

Methods:
1. Washed and cut potatoes into 8-10 wedges. This depends on how big is your potatoes.
2. Combine all ingredients. Marinate for 10 mins.
3. Bake in oven at 450º for 10-15mins or till potatoes turn golden brown.

Seafood Baked Rice

It was weekend again! Last weekend, I thought of making something special, baked rice with seafood could be a great choice and it is pretty simple too.

Grabbed a packet of dory fillet in Jusco, a packet of crab sticks, a packet of fresh sweet basil leaves & some fresh big prawns... hoala...what a good combination. It is very simple to do, just marinate all the ingredients, cook a pot of butter flavoured rice, bake it and there you go! A fresh basil fragrant seafood baked rice! Make my weekend wokking much more simpler!

And.... the result is "superb"! My hubby and my little prince loved it to bits. This also make my dish cleaning easier because of the alluminium foil baking dish. haha... Hope all of you will like it!

This recipe makes 4 servings of 5" X 3.5" baking dishes.
Ingredients:
1 Kg Dory fillets, cut into half
300gm Big-sized prawns
6 crab sticks, cut into cubes
Shredded cheese - Mozarella / Cheddar (your preference)

Rice ingredients:
1 cup rice, washed, drained
5 cloves garlic, minced
8 button mushroom - white / brown
2 tbsp butter
1 tsp salt
1 tsp white pepper

Seafood Marinate:
1 tsp salt
1 tbsp ground black pepper
6 tbsp chopped fresh sweet basil leaves
Dash of sugar

Methods:
1. Marinade seafood (fish, prawns & crab sticks) with Seafood Marinate. Set aside for 1 hour.
2. Heat wok with butter, saute garlic & button mushroom till fragrant.
3. Add rice, stir & mix for 5 mins. Pour into rice cooker, add water to cook according.
4. Add salt & white pepper. Stir well. Let in cook.
5. Prepare any baking dish (I used 3.5" X 5" alluminium foil baking dish) by coating it with some olive oil.
6. Scoop rice into the baking dish. Arrange ingredients on the rice.
7. Sprinkle some olive oil. Top up with shredded cheese.
8. Preheat oven at 180º for 10 mins. Put in 2 baking dish. Bake for 15-20mins or till cheese melted.
9. Serve immediately.
